This sweet treat is called “houzui” and is made with agar and egg white using a traditional Kyoto method and filled with sweet white bean paste. It is also called “Japanese-style” marshmallow because of its fluffy texture, however agar is used instead of gelatin. This is a very rare confectionery that only a limited number of craftsman can manufacture in Japan.
